This is radish and shallot pickle. bring white wine vinegar to the boil, turn off the heat and add sugar star anise and black peppercorns. Leave to cool so the spices diffuse, then add finely sliced shallot and radish. Put in a sterilised jar with a little of the pickling liquid.
